So as with breakfast, I often have a salad for lunch and dinner as well! The flavour combinations and recipie ideas you can create are endless. It’s also such a good way to get enough protein as well as healthy fats…. Think of all those yummy toppings!
Here are some of my recent favourites….

A bed of lettuce topped with steamed butternut, baby tomatoes, roast chicken and seeds with a balsamic glaze 
A bed of iceberg lettuce with chopped cucumber and sausages, seasoned with sweet basil and rocket and drizzled with mayonnaise 
Tuna, cucumber, rocket and celery mix with mayonnaise and roasted seeds served with grilled pumpkin slices 
Tuna and mixed salad veg with a honey mustard dressing, topped with roasted seeds and served on a bed of lettuce 
Mixed greens with chopped salad veg, topped with roasted seeds and a tangy mayo dressing 
Mixed greens and salad veggies with a balsamic dressing and roasted seeds

A basic bed of salad mix with a tomato dressing and two small pieces of chicken 
Roasted veggies with rosemary, topped with chickpeas and mayo and roasted seeds. 
A bed of lettuce, cucumber ribbons, chopped tomatoes with chickpeas and mayo and roasted seeds. 
A bed of lettuce with chopped cucumber, tomatoes, corn and roasted seeds with a creamy mustard dressing. 
A bed of lettuce topped with baked sweet potato, chopped cucumber and roasted seeds with a balsamic dressing. 
A bed of lettuce topped with sweet potato, roasted corn, cucumber and roasted seeds with a mustard dressing.
