Tuna and Sweet potato Fishcakes:

Ingredients:

• 1 Tin of tuna

• 2 eggs

• 1 TBSP of mustard

• Salt and pepper

• Oregano to season

• 1 TBSP Of Turmeric

• 1 Large Sweet potato

• 1 Large Zucchini

• 1/3 Cup of flour

• 1 TBSP Baking powder

Method:

1. Steam the potato and zucchini until soft.

2. In a separate bowl, combine all the other ingredients (except the flour and baking powder)

3. Mix together until combined and then add the flour and baking powder.

4. Spoon into burger shapes and bake at 180’ for about 30 minutes.
