Ingredients:
- 1 TBSP coconut oil
- 1 TBSP peanut butter
- 1 tsp Honey
- 1 tsp Vanilla essence
- 2/3 Cup desiccated coconut
- 1/3 Cup coconut flour
- 1/3 Buckwheat flour
- 1/2 Cup cocoa nibs
Method:
- Melt the coconut oil, peanut butter, honey and vanilla essence on the stove.
- Remove from the heat and mix in the coconut and both flours until smooth but thick.
- Add the cocoa nibs and mix until everything is combined.
- Roll into palm size ball shapes and freeze on a plate in the freezer.
- Once frozen, store in a sealed tuppaware.
- Before eating, remove from the freezer for a couple minutes.
