
This is a high protein, high flavour, nutrient packed dinner. Greeat to make as part of a large meal prep and can be frozen, eaten cold or heated up.
Ingredients:
- 1 Packet of turkey mince
- 1 Butternut, cubed
- 1 Head of broccoli, chopped
- 1 TBSP tomato paste
- Paprika
- Juice of 1 lime
- Salt and pepper
- 1/2 Cup olives
- 1 large head of spring greens
- Rapeseed oil for cooking
Method:
- Brown the mince in an oiled pan on the stove.
- Once browned, add paprika, salt, pepper and the lime juice.
- Once cooked, remove from the pan and leave aside on a plate.
- Cook the broccoli and butternut in the same pot until soft.
- Add the mince back and mix into the veggies.
- Add the olives, tomato paste and a splash of water.
- Keep cooking until everything is covered in seasoning and cooked thoroughly.
- Serve with the steamed greens.
